The Mar·ket fishmonger and eatery opening June 13

The Mar·ket, the fourth business from Feedme Hospitality (Shubert and Mira Ho and Andrew and Ciara Leckie, co-owners), has its grand opening in Edmonds Wednesday, June 13.

It joins the company’s Salt & Iron, Bar Dojo and Shooby Doo Catering.

The Mar·ket, at 508 Main St., bills itself as Edmonds’ only seafood market featuring fresh fish, fish and chips, and sushi. The restaurant will be open 10 a.m.- 9 p.m. daily, opening at 9 a.m. on Saturdays during the Edmonds Historical Museum’s garden and summer markets.

The restaurant will offer a variety of fish and seafood by the pound, takeaway items like fish tacos, sushi, lobster rolls, fish and chips, clam chowder, steamed crab, as well as other fast-casual items.

There will be a small indoor seating area, outdoor patio seating and orders available to-go from a takeout window. Customers will also have the option to have their fish selection cooked onsite for take-home dining.

There will also be retail items such as beer, wine, sauces, spices, cookbooks, branded apparel and seasonal specialties.

The Mar·ket’s chef de cuisine is former Salt & Iron lead cook Hans Korompis, who grew up in Singapore and moved to the U.S. at age 20. After years of working in Tom Douglas restaurants and running his own Chicken Rice stand, Hans started working at Salt & Iron.

Korompis will showcase fresh seafood from various parts of the world with key influences from Southeast Asia, Central America and the Pacific Northwest. Korompis' staff includes Salt & Iron sous chef Skyeler Milgate, along with Alex Marek, Feedme Hospitality’s director of operations.

“Downtown Edmonds has this wonderful homey feeling to it,” chef and owner Shubert Ho said.

“When I first saw the space, I didn’t think it was going to have much potential. But then after a few months of thinking about it, the idea of a fishmonger just made sense. How does a costal community like downtown Edmonds not have a place where you can buy fresh fish, fish tacos and sushi all in the same place?"
